Telba, The Traditional Ethiopian Drink You’ve Never Heard Of

Ethiopia is known for striking landscapes, friendly people, amazing food and rich history. Most visitors are struck by the diversity and hospitality of the locals they encounter. If you’ve been lucky enough to go to an Ethiopian food restaurant, you’ve experienced the exciting ways healthy foods like vegetables and legumes are prepared. Steamed broccoli with a touch of salt is never the same after tasting greens and beans richly spiced and cooked to perfection, paired with the traditional bread, injera. 

You may also have seen Telba on the menu. Telba is a traditional healthy beverage made from flax and honey. It’s possible to make a creamier version of Telba that’s a great healthy meal substitute or quick breakfast; it’s also great on a hot day when you want to grab something cold and refreshing. Think of this as a cool summer ‘do for your Telba!

Thick, Creamy Telba

4 Tablespoons ground Telba (slow-roasted flaxseed) 

2 Cups Water

1 Tablespoon Honey 

Boil 4 tbls of Telba with 2 cups of water for 1 minute.  Pour ingredients into cup and add honey.  Serve hot or put everything in a container with an airtight lid to shake ingredients. Let ingredients sit in the refrigerator overnight. Once you’ve let it sit for a while, you can filter out the flax sediment OR you can just drink it as-is. The extra fiber and lignans in the sediment are super healthy, so don’t sweat it if you don’t want to filter out the flax!
